Learn foundational cooking methods as taught in our Professional Program. This is your opportunity to explore cooking techniques through intensive workshops, perfect for the advanced home cook who is looking to learn the theory and science of food.

Discover the delicate, healthy, and flavourful world of steaming—a cooking technique that locks in moisture and enhances natural flavours without extra oil or fat. In this interactive Steaming cooking class, you’ll learn to create elegant seafood dishes, pillowy steamed buns, and crisp plantain chips, all while mastering the fundamentals of this gentle, yet powerful technique.

Suggested recipes:
Salmon Rillettes with Plantain Chips
A creamy, flavourful salmon spread paired with crispy, golden plantain chips for the perfect bite.

Mussels Meunière
Delicate, steamed mussels in a classic white wine, butter, and herb sauce that’s bursting with flavour.

Steamed Buns Two Ways
Master the art of making light, fluffy steamed buns, filled with savoury fillings.

About Chef Instructor Eli Silverthorne:
Eli Silverthorne (Class of 2015) is a firm advocate for Canadian Cuisine, food history, and applied culinary sciences. After graduating from Stratford Chefs School with distinction, Eli worked under chefs Bryan Steele (The Prune), and Jonathan Gushue (Berlin), while accomplishing various stages across the country, from Araxi in Whistler, to Scaramouche and Richmond Station in Toronto, and Maison Publique in Montreal.

He enjoys slow food cooking methods, curing, smoking, preservation, and fermentation; and teaching the nuances of all things culinary. In addition to teaching practical, theory and food sciences programming at Stratford Chefs School, Chef Eli is also responsible for designing, organizing and leading cooking classes in the School's public Open Kitchen program.
